This is one of our most interactive and festive classes, a true favorite at Prickly Pear Cooking Classes, designed to give every student the freedom to explore their own personal tastes through fully customizable dishes.

Here in Austin, our food culture is as deeply rooted in Mexican cuisine as it is in barbecue. We proudly embrace Tex-Mex traditions while continually drawing inspiration from the rich culinary heritage of our neighbors just across the border. Their influence is woven into the very fabric of how we cook and gather, and this class is a celebration of that connection.

Throughout the evening, we highlight the bold, vibrant flavors of Mexico while adapting techniques and recipes for the American home kitchen—making everything approachable, practical, and chef-worthy.

You’ll start by crafting your own guacamole “supreme,” built entirely to your liking. Adjust the heat level, experiment with fresh ingredients, and choose from a variety of creative add-ins to make your version uniquely yours.

Next, prepare a take on traditional elote (Mexican street corn,) fire-charred for deep, smoky flavor, served off the cob for ease, and finished with a rich drizzle of tangy aioli and cotija cheese.

From there, you’ll learn how to oven roast chicken thighs, chef’s cut of choice for their unmatched juiciness and flavor, until perfectly crisp. Discover “tricks of the trade” that lend to elevated flavor and texture. Accompany your chicken with everyone’s favorite - our house chipotle lime crema sauce. To round out your plate we will finish the dish with a bright spinach salad tossed in a fresh lime vinaigrette.

Close your meal with an rich, egg-free chocolate mousse, served alongside our signature “churro’d cookie, Mexican inspired cinnamon sugar shortbread stick.

With five full dishes, this is our most accessible menu while still offering a complete, satisfying culinary experience. It’s a lively, hands-on evening filled with creativity, flavor, and connection—designed to leave you feeling more confident in the kitchen and inspired to keep cooking.

And of course, the night ends the best way possible: by sitting down together to enjoy the incredible meal you’ve created.

Wine Pairing Recommendations: Sauvignon Blanc or Albariño, please note this is a lengthy time for just one bottle, you may want to plan for both prep and dinner. Margaritas and Ranch Waters are a great option as well.

*GLUTEN-FREE STUDENTS: This menu is naturally gluten-free, except for the cookie garnish, just email us ahead and let us know you'd like a g-f cookie! Please note the bean cake accommodation contains gluten!

*VEGETARIAN STUDENTS (and everyone else that doesn't eat chicken.) We can substitute a a traditional bean cake (made with a plant-based binder/egg replacement, HOWEVER PLEASE NOTE that the bean cake contains CHEESE and GLUTEN. We will not have the opportunity to make the bean cake in class but you will be provided the recipe to make at home. The dressing for the elote traditionally calls for mayonnaise, which contains eggs. You have the option of holding the dressing on your elote. Just let us know after booking by going to the “contact us” tab and messaging us directly, otherwise we will not be prepared for you.
